Cask No. 53.488 Lowland Cask: New American oak #4The neat nose revealed creamy, sweet peat smoke, with hints of salty old sherry sloshing about in the depths. A perfect fusion we felt, one which balanced the briny, lemony distillery character with the richness of balsamic glaze and bacon jam coming from the cask. Water revealed kippers, iodine, camphor and some lovely herbal ointments. The palate suggested smouldering hardwoods up front, with resinous fir wood, natural tar extracts, pickled walnuts
